Pancake Mix Biscuits

When Mother Nature serves up the second major natural disaster in 4 months, and your wife is serving leftover Shepard’s Pie, whip up some Pancake Mix Biscuits. I was looking for something that would come out of our food stores, since we were honest to goodness snowed in it just seemed appropriate.

 

2 1/2 cups Pancake Mix

1/3 cup water

1/4 cup butter, melted

1 egg

 

 

 

 

  1. Mix all the ingredients until a soft dough forms
  2. Pull the dough out on to a lightly floured surface and knead gently.
  3. Roll it out to 1/2″thick.
  4. Use a biscuit cutter to cut them out.
  5. Place on an ungreased baking sheet. I like to use parchment paper for this.
  6. Bake for 10-12 minutes or until golden brown.
  7. Serve with butter (and jelly).

These turned out really well. I would definitely make them again.

Edit: Pre-Heat the oven to 400 degrees! How could I forget to add that!!!

    A thought for you. In the email that is sent out to the subscribers you should give a direct link too the blog post and tell me a little bit about the post so subscribers can get a taste and want more.

    I love Shepard’s Pie. One day internet technology will allow us to taste food over the web. Gotta get going on that Star Trek Tech!

    Are the biscuits made from complete pancake mix or the type that eggs and oil are added to?

      vikki- They were made with a complete pancake mix.

    Check your mixes – some of them contain Monosodium Glutamate (MSG). Not good!

    Here’s a “homemade recipe” that will last weeks:

    Homemade Biscuit Mix:

    • 9 cups flour
    • 1/4 cup sugar
    • 2 1/3 cups powdered milk
    • 1 tablespoon salt
    • 1/3 cup baking powder
    • 2 cups shortening
    • 1 TBSP Cream of Tartar
    Directions
    1. In a large pan, stir the dry milk, baking powder, sugar and salt into the flour; mix thoroughly.
    2. Cut the shortening into the dry ingredients until the MIX is the consistency of corn meal.
    3. Place the mix in a covered glass or plastic container and keep in a cool, dry place.
    4. In warm weather the MIX should be refrigerated.
    5. Use within 2-3 weeks if not refrigerated; 8-10 weeks if refrigerated.
    6. To measure, pile the MIX lightly into a cup and level off with a spatula or the back of a knife.

    For biscuits, mix together 3 cups of baking mix and 2/3 cup water or milk. Blend well, knead slightly, then roll out and cut into desired shape. Bake at 450° for 10 to 15 minutes. Makes 10 to 12 biscuits. For drop biscuits, add 2 tablespoons extra liquid.

    Use drop biscuit recipe for Shepherd’s Pie topping; add grated cheese, garlic, whatever you like, to personalize the results!

    Edit: Oops! I see an error! Step 1 should be ALL dry ingredients, including Cream of Tartar. My bad!

    this sounds great. I might have to try them just for something different to try :). I know you can make up a mix and it lasts for weeks. But I much perfer to mix them up when I am ready to use them. And this sounds like just a different twist on that. 🙂

    You could also use this mix to make pancakes. I have a similar recipe to the above, slight variation in amounts. For pancakes, use 2 cups of mix, 1 egg and about 1 1/3 cups of milk. (My recipe doesn’t include powdered milk, but with this one you may be able to use water instead of milk). It’s pretty much an all purpose baking mix.
