Guinness Lamb Stew

With this darn cold hanging around this early Spring, I was in the mood to take a swing at some good Homestyle Cooking and Guiness Lamb Stew fit the bill perfectly! I found a great recipe and a new must read blog Once Upon a Chef, their recipe for Guinness Lamb Stew was excellent!

I had a tough time finding the lamb shoulder that the recipe called for and I had to substitute leg of lamb for it. I was a bit worried about whether the leg of lamb would get tender enough to make a decent stew. I carefully trimmed the fat, silver skin, and anything else that didn’t pass muster. Either the Gods of Cooking smiled upon me or my obsessive butchering paid off as the lamb was melt in your mouth tender!

I would make this again in a heartbeat! If I could find a less expensive source of lamb this would supplant Beef Stew in my repertoire. I get asked a lot about my Le Creuset Signature Enameled Cast-Iron 7-1/4-Quart Round French Oven, Cherry, as it shows up in a lot of my homestyle cooking blogs. It is one of my favorite pieces of kitchen gear, it is a bit high brow but it will outlast me, and nothing cooks quite like cast iron.
