Huevos Rancheros, Fast And Easy

Huevos Rancheros

Huevos Rancheros is a popular breakfast food in Mexico. Traditionally it is fried eggs with a tomato-chile sauce and refried beans. This is my bastardized version that I came up with on a snowy Friday morning. Made with 5 ingredients and only 1 frying pan what they lack in authenticity they make up for in flavor and speed. As a side benefit they are pretty darn healthy for you as well.

Huevos Rancheros Ingredients

  • 16 ounce Jar of a good salsa
  • 15.5 ounce can of black beans, rinsed
  • 4 Eggs
  • 4 Corn Tortillas
  • Shredded Cheese (cheddar or Monterrey jack)

Huevos Rancheros Directions

  1. Pour the salsa into a pan and add the rinsed black beans. Bring the mixture to a gently simmer.
  2. Using the back of a spoon make 4 dimples in the salsa and bean mixture.
  3. Into each of the dimples that you made crack one egg. Cover the pan.
  4. The eggs will poach in the salsa and black bean mixture.
  5. Keep checking the eggs.  I like to have a fairly runny yolk so once the egg whites are set I’m scooping my eggs out.
  6. Serve the eggs, salsa and black bean mixture on warm corn tortilla with your choice of cheese grated over the top.

Wrap-Up

This is a great breakfast to whip on a cold and snowy morning like we did around here. My Wife and I really enjoyed it. Our 5 year old turned his nose up at it but he loves Kraft Mac and Cheese so his opinion is suspect anyway. This might not be an authentic version but it scratches an itch and makes my mouth happy so I’ve got no problem recommending it to my loyal readers! I like to save a little bit of the left-overs to mix with some rice and add a bit of chicken to, it makes for a fine lunch to take to work.
