Chick Peas for the Apocalypse!

Chick Peas For Preparedness

I thought it was time to branch out a little bit tonight and combine two of my favorite things, cooking and prepping. Come on admit it, you’ve got a closet or bucket full of beans stashed away somewhere, and are armed with only 1 or 2 recipes for cooking them. A can of Chick Peas can be turned into a pretty tasty dinner in a matter of minutes with or without power and hopefully break up the rice and bean doldrums if it ever comes to it. I know I personally plan on waiting out the next blizzard, blackout, or Zombie Horde in style and a bit of hummus can help with that.

Hummus

Hummus is a blend of chick peas, lemon juice, olive oil, garlic, tahini, and salt. Tahini is a sesame paste, it always reminds me vaguely of peanut butter and in my research it seems to last for months. I’ve made hummus by hand with a potato masher and in the blender. The blender yields a smoother texture but they taste the same. Here is the recipe I use for my “base” Hummus:

Ingredients

  • 1 15oz Can of Chick Peas (drained and rinsed)
  • 1/4 cup of lemon juice
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1 tbs extra-virgin olive oil
  • 1/4 cup tahini
  • Dash of Hot Sauce

That is my ‘base” hummus. To this I’ll add ground horseradish (my wife’s homemade stuff is nuclear!) or roasted Red Peppers. It is also good with Roasted Garlic.

We like it as a snack or a meal. It is especially good with Homemade Grill Bread and roasted or grilled veggies fresh from our garden. I love a meal that comes out of my garden and pantry, I find it comforting to know that in an emergency I can whip up something nutritious and tasty for the family!

    I’m a big fan of chickpeas too, and I love hummus. If you like cumin, it’s also good in hummus. I’ve also made a hummus with roasted walnuts instead of tahini. Yum…
