Chocolate From Scratch

Following along with my theme of homestyle cooking, I was lucky enough to have my wife make a chocolate cake from scratch. I must have done something REALLY good in the past to deserve her! It is pretty nice to live with someone who can whip up a cake out of pantry items. Well enough kissing up here is the recipe.

Ingredients

  • – 2 c. of sugar
  • – 1 3/4 c. all purpose flour
  • – 3/4 c. cocoa
  • – 1 1/2 tsp. baking powder
  • – 1 1/2 tsp. baking soda
  • – 1 tsp. salt
  • – 2 eggs
  • – 1 c. milk
  • – 1/2 c. vegetable oil
  • – 2 tsp. vanilla extract
  • 1 c. boiling water

The Recipe

  1. Pre-Heat oven to 350 and grease and flour two 9″ round baking pans
  2. Combine dry ingredients in a large bowl
  3. Add eggs, oil, milk, and vanilla. Beat on a medium for 2 minutes.
  4. Stir in boiling water. The batter will be pretty thin at this point.
  5. Pour into pans.
  6. Bake for 30-35minutes or until toothpick comes out clean.
  7. Cool for 10 minutes. Remove from pans and cool completely on wire racks.

The chocolate frosting.

Ingredients

  • 1 stick butter
  • 2/3 c. cocoa
  • 3 c. powdered sugar
  • 1/3 c. milk
  • 1 tsp. vanilla extract

The Recipe

  1. Melt butter
  2. Stir in cocoa
  3. Alternately add milk and powdered sugar while beating on medium speed (add more milk if needed).
  4. Stir in vanilla

Well there you have it. The cake was delicious.
