Homemade Corned Beef Hash

Corned Beef Hash

I love St. Patrick’s Day, I get to make one of my favorite dishes Corned Beef Hash. As long as I can remember my Mom lugged out the grinder to make this with the left-overs from St. Patty’s day. I’m ashamed to admit that as a kid I wouldn’t eat the homemade version but loved the canned stuff (kid’s aren’t that bright sometimes!). If you made the Corned Beef and Potatoes the night before this couldn’t be easier. It is basically equal amounts of ground Corned Beef and Potatoes, plus I like to add a small diced onion, and a bit of milk to bind it all together. I like to get a nice crisp on it. I put the hash in a cast iron pan with a little oiland let it get nice and crispy on the bottom, then I mix it so I get a nice blend of textures. I then crack a few eggs over the top and let them cook sunny side up right in the hash. It is awesome!

The Ingredients

  • Cooked and Ground Corned Beef (Beer Braised Saint Patrick’s Day leftovers are the best!)
  • Cooked Potatoes
  • A bit of diced onion
  • Milk

The Recipe

  1. Mix the Ground Corned Beef, Potatoes, and Onions together
  2. Slowly add the milk until the mixture is bound together.

How To Serve It

This is the fun part! Heat a cast iron skillet with a bit of oil in it until it is nice and hot! Add the Corned Beef Hash and fry until it is nice and crispy. Flip it over and get a bit of crisp on the other side. Crack a few eggs on top and let them go until they are a nice sunny side up! It is awesome!!!

The Kitchen Aid getting it done!
Mmmmmmmmmmm…Ground up salty goodness.
Dicing the potatoes.
Putting the crisp on it!
My Great-Grandmother’s Grinder. My Mom used to grind the Corned Beef by hand and I still thumbed my nose at it.
The finished product.

This is a great little recipe and I look forward to making it all year. It combines my love of old kitchen gadgets, cast iron, and of course Corned Beef.

I never knew how corned beef hash was made. Looks yum.

Yeah, speaking of not-too-bright-kids, when we lived in Alaska, I refused to eat the freshly salmon. I thought it was so gross that I would surround myself with cereal boxes just so I didn’t have to watch anyone eating it. When I think about that food memory, I could kick myself!

As I was reading this I slapped my forehead and exclaimed, “Why didn’t I think of that?!” We always have leftovers from St. Patty’s day and we LOVE corned beef hash (the canned stuff – I never tried to make it from scratch!) Now I know what we’ll be having on 3-18. I love the picture of your grandmother’s grinder. I remember helping my mom make braunschweiger with one of those. How I would love to still have it!

I have made it in the past but never ground the CB. I may try this. I also plan to use my burger press to make patties that I can freeze and use later.
