You should be saving your bacon fat. It is an easy way to add a smokey and meaty flavor to just about anything.
I use a paper coffee filter and mason jar. I pinch the filter to the jar with a ring and let the warm, not hot, fat filter into the jar. This yields a nice clear liquid the cools into a pleasant white solid. If you end up with more than you need in your fridge I recommend storing some in the freezer. I have a hard time getting rid of any of it!
